Lately, I’ve been obsessed with making fun, bite-sized foods that look cute on the table but still taste amazing. Especially when cooking for family, I always try to create dishes that are simple, pretty, and guaranteed to disappear fast. And this one? Gone in minutes.
Seriously.
These juicy mushroom mini burgers are one of my proudest little creations. The mushrooms are pan-fried until golden and juicy, then stuffed with tender shrimp paste, layered with cheese, veggies, and sauce.
Every single bite is juicy, savory, and super satisfying. My kids kept grabbing them one after another I barely had time to take photos!

Ingredients
Main:
- Button mushrooms (stems removed)
- Shrimp paste
- Black pepper
- Sea salt
Sauce:
- Light soy sauce
- Mushroom pan juices
Toppings & Filling:
- Lettuce
- Cucumber slices
- Cherry tomatoes
- Cheese slices
- Ketchup
- Salad dressing
Extras:
- Toothpicks
Step-by-Step Instructions
Prepare the Mushrooms
Remove the stems from the mushrooms.
Use a spoon to gently scoop and enlarge the hole inside the mushroom so it can hold more filling later.
Pan-Fry the Mushrooms
- Heat a pan over medium heat and lightly oil it.
- Pan-fry the mushrooms until both sides are golden brown.
- Flip them over and cook until the natural juices start to release.
- Season with sea salt and black pepper.
- Remove the mushrooms and set them aside.
Keep the mushroom juices in the pan don’t throw them away!
Stuff the Mushrooms with Shrimp Paste
Fill each mushroom cavity generously with **shrimp paste**.
Fry the Shrimp-Stuffed Mushrooms
- Place the shrimp-stuffed mushrooms into the pan.
- Pan-fry until golden and crispy on one side, then flip and cook the other side.
Make the Juicy Sauce
- Take the reserved mushroom juices and pour them into a small bowl.
- Add ½ spoon light soy sauce and mix well.
- Pour this sauce back into the pan.
- Simmer on very low heat for 3 minutes to let the flavors soak in.
Build the Mini Burgers
On each shrimp patty, layer:
- Lettuce
- Cucumber
- Cherry tomato
- Cheese slice
Squeeze on:
- Ketchup
- Salad dressing
Let the cheese melt slightly from the heat.
Assemble
Place the golden mushroom caps on top.
Secure with a toothpick.
