For this incredible Loaded Baked Nachos recipe, I drew inspiration from an amazing video tutorial by Nghtrvlr on TikTok.


Ingredients:

- 1 bag (approximately 10-12 ounces) of tortilla chips (choose your preferred thickness and style)

- 2 cups of shredded cheese (cheddar, Monterey Jack, or a combination)

- 1 cup of black beans, rinsed and drained

- 1 cup of corn kernels (fresh or canned)

- 1 small red onion, finely diced

- 1 small jalapeño pepper, thinly sliced (optional for spice lovers)

- 1 ripe avocado, diced

- 1 small tomato, diced

- 1/4 cup of chopped fresh cilantro

- Sour cream, for serving

- Salsa, for serving

Instructions:

1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or aluminum foil.

2. Spread a layer of tortilla chips evenly on the prepared baking sheet, ensuring they overlap slightly.

3. Sprinkle half of the shredded cheese evenly over the tortilla chips, covering them as much as possible.

4. Add half of the black beans, corn kernels, diced red onion, and jalapeño slices (if using) over the cheese layer.

5. Repeat the process by adding another layer of tortilla chips, the remaining shredded cheese, and the remaining black beans, corn, red onion, and jalapeño slices.
