Ingredients:
- 500g beef mince
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1 carrot, grated
- 1 zucchini, grated
- 1 red capsicum, chopped
- 1 can of diced tomatoes
- 1 tbsp tomato paste
- 1 tsp paprika
- 1 tsp dried oregano
- Salt and pepper, to taste
- 1 tbsp olive oil
- 4 medium sweet potatoes, peeled and chopped
- 1/4 cup milk
- 1 tbsp butter
Instructions:
Heat olive oil in a large pan over medium heat. Add onion and garlic, and cook for 2-3 minutes until softened.
Add beef mince and cook for 5-6 minutes until browned, breaking it up with a wooden spoon as it cooks.
Add grated carrot, zucchini, and chopped capsicum to the pan. Stir to combine and cook for 2-3 minutes until the vegetables have softened.
Add canned tomatoes, tomato paste, paprika, and dried oregano to the pan. Stir to combine and bring to a simmer.
Reduce heat to low and let the mixture simmer for 10-15 minutes until the sauce has thickened and the flavors have melded together. Season with salt and pepper to taste.
While the beef mince is simmering, cook the sweet potatoes in a pot of boiling water for 10-15 minutes until tender.
Drain the sweet potatoes and return them to the pot. Add milk and butter, and mash until smooth and creamy.
