Ingredients

For Cookie Dough

- Powdered Sugar: 32g

- Salt: A pinch

- Egg Yolk: 18g

- Light Flour (Ecriture): 68g

- Almond Powder: 12g

For Buttercream

  • Unsalted Butter: 60g
  • White Chocolate: 60g
  • Freeze-Dried Strawberries: About 3-4 pieces

Preparation

1. Bring the egg yolks and butter to room temperature.

2. Sift the flour and almond flour together.

3. Preheat the oven to 180 degrees.

4. Bring the butter for the buttercream to room temperature.

Instructions

Making the Cookie Dough

1. In a bowl, mix unsalted butter, powdered sugar, and a pinch of salt with a spatula.

2. Switch to a hand mixer and blend until the mixture whitens.

3. Add the egg yolk and mix until emulsified.

4. Carefully return the butter from the mixer blades to the bowl, add the sifted flour, and mix with a rubber spatula until the dough comes together.

5. Wrap the dough in plastic wrap and let it rest in the refrigerator for 1 hour.

6. Roll out the dough to 3mm thickness between plastic wraps.

7. Cut out the cookies using a patterned stamp and chill for 30 minutes.

8. Preheat the oven to 180 degrees, then reduce to 170 degrees and bake for about 15 minutes.

Making White Chocolate Buttercream

1. Melt white chocolate in a bowl over a hot water bath at about 50 degrees.

2. Beat room temperature butter until whitish with a hand mixer.

3. Once the chocolate has cooled, add it to the butter and mix.

4. Slice freeze-dried strawberries and add them to the buttercream.

5. Pipe out cookie-shaped cookies onto a lined baking sheet and top with sliced strawberries.

6. Add more buttercream, smooth the surface, and refrigerate until hard.

7. Cut out the cookies using a stamp and chill thoroughly.

 Assembling the Cookies

1. Coat a stamp cookie cutter with powdered sugar.

2. Cut out the cookies, and for intricate designs, remove the stamp part and press from the back with chopsticks.

3. Sandwich the cookies together, adding diced freeze-dried strawberries for extra cuteness.
