Preparation
Before we get started, here are some preliminary steps:
- Prepare a boiling water bath.
- Chill the butter in the refrigerator.
- Sift the thin flour.
- Preheat your oven to 160 degrees Celsius.
The Baking Process
Now let's move on to the actual baking process:
1. Melt the white and strawberry chocolate in the boiling water bath at around 50 degrees Celsius.
2. Add the chilled butter and stir until it has melted and mixed in completely. The final mixing temperature should be between 35 and 40 degrees Celsius.
3. Mix the sifted thin flour until everything is well combined. Continue to mix until the dough comes together.
4. Wrap the dough tightly with your hands and form it into a cylinder with a diameter of about 3 cm.
5. Roll the dough on a baking sheet to even its thickness.
6. Cover the dough with a wrap and freeze it in the fridge for 10 minutes.
7. Cut the dough into pieces with a thickness of 5 mm.
8. Place the cookies on a baking sheet and bake them at 160 degrees Celsius for 3 to 4 minutes.
Note: For this type of dough, it's better to use a baking sheet rather than a silpat or silpatot. Also, remember that overbaking is the enemy. The edges of the cookies should not melt like chocolate. If they do, it means you've overcooked them. To achieve a soft, melting texture, you can slightly undercook the cookies. Always check the center temperature of the cooked cookies to make sure it's above 65 degrees Celsius to prevent foodborne illnesses.
And voila! You now have a batch of melting strawberry cookies. Enjoy them warm, or let them cool down before storing them in an airtight container.
