Ingredients:

  - Granulated Sugar ... 40g

  - Lemon Juice ... 5g

- Cheesecake Dough:

  - Granulated Sugar ... 60g

  - Eggs ... 2

  - Light Flour ... 15g

  - Cornstarch ... 5g

  - Fresh Cream ... 200ml

- Decoration:

  - Strawberries ... 5-6

  - White Chocolate ... as needed

  - Strawberry Chocolate ... as needed

Preparation:

- Bring the cream cheese to room temperature to soften it.

- Measure and sift all the flour together.

- Preheat the oven to 230°C and prepare a baking dish lined with crumpled, dampened parchment paper.

Making the Strawberry Jam:

1. Place the fresh strawberries for jam in a small pot, sprinkle with granulated sugar, and heat.

2. Add lemon juice and simmer until it softens into a jam-like consistency.

Making the Cheesecake Dough:

1. Whisk the room temperature cream cheese until smooth, ensuring minimal air incorporation.

2. Add granulated sugar and mix well.

3. Gradually add beaten eggs, mixing thoroughly.

5. Fold in the sifted flour and cornstarch until combined.
