For a delicious Raspberry Marble Cake, you'll need 80g of unsalted butter, 70g of granulated sugar, 75g of eggs, 80g of light flour, 2g of baking powder, 100g of raspberry puree, and 40g of coated white chocolate. Start by letting the butter and eggs warm up to room temperature. Mix the flour and baking powder together. Preheat your oven to 180℃.

Ingredients

- 100g Raspberry Puree

- 40g Coated White Chocolate

- Framboise Brisée (as needed)

Preparation

1. Warm Up: Let the butter and eggs reach room temperature.

2. Mix Dry Ingredients: Combine the flour and baking powder.

3. Preheat Oven: Set your oven to 180℃.

Making the Cake

1. Prepare Raspberry Puree: Boil the raspberry puree until it's about 50g and let it cool down.

2. Prepare the Mold: Apply butter to the mold, sprinkle with flour, and shake off any excess.

3. Mix the Batter: In a bowl, mix the butter until it turns white. Add sugar and mix until fluffy. Gradually add the beaten eggs and mix. Then, add the sifted flour and mix until glossy.

4. Create the Marble Effect: Take 80g of the dough, mix it with 30g of the puree, and mix well. Add this mixture back to the original dough and mix roughly.

5. Bake: Place the mixture in a mold and bake at 180℃ for 25 to 30 minutes.

6. Cool and Decorate: Let the cake cool down, wrap it in plastic wrap to prevent drying out, then sprinkle white chocolate on top and garnish with framboise brisée.
