Ingredients

For the Mochi

  • 210 g glutinous rice flour
  • 30 g corn starch
  • 80 g sugar
  • 340 ml milk
  • 40 g unsalted butter

For the Matcha Pancakes

  • 3 eggs
  • 35 g sugar
  • 30 g honey
  • Pinch of salt
  • 90 ml water
  • 120 g all-purpose flour
  • 18 g glutinous rice flour
  • 5 g baking powder

How to Make It

✅ Make the Mochi

  1. In a heatproof bowl, combine glutinous rice flour, corn starch, sugar, and milk. Mix well until smooth.
  2. Steam the mixture over medium heat for about 30 minutes.
  3. While hot, add butter and knead or pull the dough until smooth, elastic, and shiny. Let it cool.

✅ Make the Matcha Pancakes

  1. Mix eggs, sugar, honey, and salt until smooth. Add water, then sift in flour, glutinous rice flour, and baking powder. Mix until well combined.
  2. Pour the batter into a squeeze bottle or piping bag for easy control.
  3. On a non-stick pan over low heat, squeeze out round circles of batter. Cook until bubbles appear, flip gently and cook the other side briefly.

✅ Assemble the Dorayaki

  1. Spread taro paste onto one pancake.
  2. Add a piece of the mochi dough on top.
  3. Cover with another pancake to make a sandwich. Press lightly to seal.
