Brown Butter Cookies: Crispy Edges with a Chewy Toffee Center
Cake Decorations DessertBrown Butter Chocolate Chip Cookies Crispy Edges, Soft Center
Cookies like this are the kind I usually make when I just want something simple but really satisfying. No fancy techniques, just a good dough and a warm oven. The smell alone when these are baking already feels like a reward.
What makes this version a bit special is the browned butter. It adds that slightly nutty, deeper flavor that makes the cookies taste richer without needing extra ingredients. Paired with brown sugar and dark chocolate, the result is soft in the middle with slightly crisp edges.
This recipe is also great if you don’t want to make a huge batch. Just a few cookies, quick to prepare, and honestly… they disappear pretty fast.
Ingredients
- 90 g all-purpose flour
- 1 g baking soda
- 1 g baking powder
- 55 g unsalted butter
- 70 g brown sugar
- 40 g granulated sugar
- 1/2 egg (lightly beaten)
- 1.5 g vanilla extract
- 50 g chocolate chips (70% cacao)
Instructions
1. Brown the Butter
Melt the butter over medium heat until it turns golden brown and smells slightly nutty.
Let it cool for a few minutes so it’s not too hot.
2. Mix Wet Ingredients
In a bowl, combine the browned butter, brown sugar, granulated sugar, and vanilla extract.
Mix until smooth.
Add half of the beaten egg and mix again until fully combined.
3. Add Dry Ingredients
Add flour, baking soda, and baking powder into the mixture.
Stir until a soft dough forms.
Fold in the chocolate chips evenly.
4. Shape the Dough
Divide the dough into 9 equal portions.
Roll each into a ball and place them on a lined baking tray.
You can press a few extra chocolate chips on top for a nicer look.
5. Bake
Preheat oven to 175°C.
Bake for about 8 minutes.
The edges should look set, while the center stays soft.
6. Cool & Enjoy
Let the cookies cool for a few minutes before touching.
They will firm up slightly as they rest.
Final Result
You’ll get cookies with slightly crisp edges and a soft, chewy center. The browned butter gives a deeper flavor, and the chocolate melts nicely in every bite. Simple, cozy, and really hard to stop at just one.
