Ingredients

  • 20 g granulated sugar
  • 2 egg yolks
  • 250 g whipping cream
  • 200 g chocolate chips (at least 52% cacao, preferably darker for richer flavor)
  • Cocoa powder (for dusting)


Step-by-Step Instructions


Step 1 – Heat the Base

  • In a saucepan, combine sugar, egg yolks, and whipping cream.
  • Heat over low heat while whisking continuously until everything is well combined and you start to see small bubbles forming on the edges.
  • Turn off the heat.


Step 2 – Add Chocolate

  • Let the mixture cool slightly to about 60°C (warm, not too hot).
  • Add the chocolate chips and stir until completely melted and smooth.


Step 3 – Prepare the Mold

  • Line your container or mold with parchment paper for easy removal later.
  • Pour the chocolate mixture evenly into the mold.


Step 4 – Chill

  • Refrigerate for 3–5 hours until fully set and firm.


Step 5 – Finish & Serve

  • Remove from the mold and cut into cubes.
  • Dust lightly with cocoa powder before serving.


Tips

  • Use higher cacao chocolate (60–70%) for a deeper flavor
  • Don’t overheat the mixture low heat keeps the texture smooth
  • For cleaner cuts, use a warm knife when slicing
