What makes these special is that signature crackly top. You know the one slightly shiny, with delicate cracks that form as they bake. And inside? Soft, moist, and almost fudgy like a brownie. It’s honestly hard to stop at just one.


I’ve tested this recipe a few times to get the texture just right, and the key really comes down to temperature and timing. Once you get that right, you’ll have bakery-style brownie cookies at home.


Ingredients

  • 80g dark chocolate (55%–65%)
  • 34g butter
  • 40g egg (room temperature)
  • 40g sugar
  • 1g salt
  • 28g cake flour
  • 8g cocoa powder
  • 1g baking powder


Step-by-Step Instructions


Step 1 – Preheat the Oven


  • Preheat your oven to 180°C (top & bottom heat) for at least 20 minutes.


Step 2 – Melt Chocolate & Butter

  • Using a double boiler, melt the dark chocolate and butter together.
  • Keep the temperature below 60°C so the chocolate stays smooth.


Step 3 – Add Egg & Sugar

  • Let the mixture cool slightly (around 33°C), then add the egg, sugar, and salt.
  • Mix until smooth and glossy.


Step 4 – Add Dry Ingredients

  • Sift in cake flour, cocoa powder, and baking powder.
  • Gently fold until just combined. The batter should be thick and shiny.


Step 5 – Pipe or Scoop
