Vanilla Ice Cream

Simple, creamy, and full of real vanilla flavor

There’s something about homemade vanilla ice cream that just hits differently. It’s not overly sweet, not artificial just clean, rich, and creamy with that warm vanilla aroma. I always feel like this is the kind of dessert everyone should try making at least once.

What I love most is how versatile it is. You can enjoy it on its own, or pair it with brownies, pies, or even just fresh fruit. And when you use real vanilla pods, the flavor is so much deeper and more fragrant compared to store bought versions.

This recipe is actually pretty simple, especially if you have an ice cream maker. Once you get the base right, the machine does most of the work for you. The hardest part is honestly just waiting for it to freeze.

Ingredients

  • 1 1/3 cup milk (320g)
  • 2/3 cup granulated sugar (152g)
  • 1 cup whipping cream (240g)
  • 2 vanilla pods

Step-by-Step Instructions

Step 1 – Infuse the Vanilla

  1. Slice the vanilla pods lengthwise and scrape out the seeds.
  2. Add both the seeds and the pods into the milk.
  3. Heat gently until warm (not boiling), allowing the vanilla flavor to fully infuse.

Step 2 – Mix the Base

  1. Add the sugar and whipping cream into the warm milk.
  2. Stir until the sugar dissolves completely.
  3. Strain the mixture to remove the vanilla pods for a smoother texture.

Step 3 – Prepare the Ice Cream Maker

  1. Pour the mixture into your ice cream maker bowl.
  2. Place the bowl back into the machine and secure the lid.

Step 4 – Churn

  1. Turn on the machine and select ice cream mode.
  2. Set the time to about 40 minutes (or follow your machine’s default setting).
  3. Let it churn until the mixture thickens into a soft-serve consistency.

Step 5 – Freeze

  1. Transfer the ice cream into a container.
  2. Freeze for at least 2 hours to firm up before serving.

Tips

  • Don’t skip the vanilla pods they make a big difference in flavor
  • Keep the mixture chilled before churning for better texture
  • If you want it extra creamy, let it sit at room temp for 2–3 minutes before scooping

Final Result

A smooth, velvety vanilla ice cream with a rich, natural aroma and just the right level of sweetness.

Simple, classic, and honestly one of those recipes you’ll keep coming back to.
