Ingredients
- 280 g all-purpose flour (about 2¼ cups)
- 240 g lukewarm water (1 cup)
- 1 tsp instant yeast
- 1 tsp sugar
- 1 tsp salt
- 2 tbsp olive oil

- Coarse salt or flaky sea salt
- Extra olive oil
Instructions
1. Mix the Dough
- In a large bowl, combine the lukewarm water, yeast, and sugar.
- Add the flour and mix until no dry flour remains.
- Add the salt and olive oil.
2. Coil Fold the Dough
- Using wet or lightly oiled hands, begin folding the dough over itself directly in the bowl.
- Continue coil folding until the dough becomes smoother and resists folding further.
- Cover the bowl and let the dough rest in a warm place for about 2 hours, or until doubled in size and bubbly.
3. Divide and Shape
- Lightly flour a sheet of parchment paper.
- Transfer the dough onto the parchment and divide it into 4 equal portions.
- Gently stretch or press each portion into a small oval or rectangle using your fingertips.
4. Add Toppings
- Drizzle olive oil generously over each focaccia.
- Use your fingertips to lightly dimple the surface.
- Sprinkle with oregano and coarse salt if desired.
5. Bake
- Preheat the oven with a baking tray inside for at least 30 minutes at the highest temperature your oven allows.
- Carefully transfer the parchment with the dough onto the hot tray.
- Bake for about 8 minutes.
- Switch to broil/grill mode for an additional 2 minutes until the tops become deeply golden and lightly crisp.
6. Serve
- Remove from the oven and let cool slightly.
- Serve warm with olive oil, soup, cheese, or your favorite sandwich fillings.
