Ingredients:

  • 6 slices of bacon, cut into squares
  • 6 large russet potatoes, peeled and diced
  • 1 tablespoon of salt
  • 1 medium onion, diced
  • 3 cloves of garlic, minced
  • 1/4 cup of all-purpose flour
  • 4 cups of chicken broth
  • 2 cups of half and half
  • 1 cup of shredded cheddar cheese
  • 1/2 cup of sour cream
  • 2 tablespoons of chopped chives
  • Salt and pepper to taste

Instructions:

  1. In a large pot, cook the bacon over medium heat until it is crispy. Remove from the pot and set aside.

  2. In the same pot, add the diced potatoes and 1 tablespoon of salt. Cover the potatoes with 1 inch of water and bring to a boil. Reduce the heat to low and simmer for about 20 minutes or until the potatoes are fork-tender.

  3. Drain the potatoes and set them aside. Mash them gently with a fork or potato masher.

  4. In the same pot, leave 1 tablespoon of bacon drippings and add the diced onions. Cook over medium heat for 5 minutes or until the onions are soft and translucent.

  5. Add the minced garlic and butter to the pot and cook for another minute.

  6. Stir in the all-purpose flour and cook for 1 full minute to cook off the raw flour taste.

  7. Add the chicken broth and half and half to the pot. Bring to a boil and then reduce the heat to a simmer.

  8. Add the mashed potatoes to the pot and mix well. Stir in the shredded cheddar cheese, sour cream, and some pepper.

  9. Remove the pot from the heat. If desired, blend the soup with an immersion blender or transfer it to a blender in batches for a creamier and smoother consistency.

  10. Add the bacon and chopped chives to the pot and stir well.

  11. Serve the Baked Potato Soup hot with some additional shredded cheese and chives on top.
