Ingredients

  • 225 grams of light flour
  • 25 grams of almond flour
  • 100 grams of powdered sugar
  • 100 grams unsalted butter
  • A pinch of salt
  • 40 grams whole egg (about one egg)

Instructions

  • In a bowl, cream the butter, powdered sugar, and salt. Continue mixing until the mixture is light and fluffy.
  • Beat the egg separately and gradually add it to the butter mixture, making sure to mix well after each addition.
  • Sift the light and almond flours, then add them to the creamed mixture. Use a rubber spatula to mix until a smooth dough forms.
  • Divide the dough into three equal portions. Shape each portion into a ball, wrap it in plastic wrap, and refrigerate for at least an hour. Note: Extra dough can be frozen for later use.
  • Roll out one portion of the dough between two sheets of plastic wrap to a thickness of about 3mm using a rolling pin.
  • Use your favorite cookie cutters to cut out shapes. Tip: If the dough becomes too soft during this process, place it in the refrigerator to firm up before continuing.
  • Preheat the oven to 180℃ (356℉), lower the temperature to 170℃ (338℉), and bake for 13 to 15 minutes, until light golden brown. Adjust the temperature and time according to your oven.
  • Optional: Use icing made from meringue powder and powdered sugar to decorate the cookies as desired.
