Directions

For the Yogurt Mousse:

  1. Thaw your strawberry puree in the fridge.

  2. Combine granulated sugar with the yogurt.

  3. Sprinkle gelatin over the water. Heat in a 600W microwave for 20 seconds to mix and dissolve. Add it to the yogurt mixture.

  4. Whip your fresh cream in a bowl over ice water until it starts to run smoothly.

  5. Fold the whipped cream from Step 4 into your yogurt mixture.

  6. Slice strawberries thinly and press them onto the inside of your serving glass.

  7. Pour the mousse into the strawberry-lined glass until it's about halfway full. Chill in the fridge until firm.

For the Strawberry Mousse:

  1. Warm the strawberry puree by boiling it gently.

  2. Combine the sugar with your heated puree.

  3. Repeat the gelatin process from Step 3, this time adding the dissolved gelatin to the warm strawberry puree.

  4. Whip the fresh cream for about 8 minutes. Fold it into the strawberry puree in several batches.

  5. Pour the strawberry mousse over the set yogurt mousse. Gently shake the serving dish to create a smooth surface. Chill this in the fridge until it sets.

For the Strawberry Jelly Layer:

  1. Heat your strawberry puree to approximately human body temperature.

  2. Sprinkle gelatin into your water, heat in the microwave at 600W for 20 seconds to dissolve, then blend into your warm strawberry puree.
