Ingredients:

- Crepe fabric or a non-stick pan

- 60g strong flour

- 20g granulated sugar

- A pinch of salt

- 180g milk

- 60g whole eggs

- 10g unsalted butter

For Finishing:

- Powdered sugar (to taste)

How to Make:

1. Mix the Dry Ingredients: Combine the strong flour, granulated sugar, and a pinch of salt in a bowl. Whisk these together until well mixed.

2. Warm the Milk: Pour 180g of milk into a heat-resistant mug and warm it for about 30 seconds. Then, pour half of the milk into the bowl with the dry ingredients and mix thoroughly. Be careful if the milk is too cold; it can cool and solidify when you add the melted butter.

3. Add the Eggs and Remaining Milk: Include the whole eggs and the remaining milk into the bowl. Mix everything together until well combined.

4. Melt the Butter: Use the microwave to melt the unsalted butter. Once melted, mix it well with the batter.

5. Strain and Chill: Strain the dough through a mesh to remove any lumps. Cover the dough with plastic wrap and refrigerate for at least 3 hours. You can leave it overnight if you prefer.

6. Mix Before Baking: Before baking, mix the dough thoroughly again. This step is crucial because the powdered sugar might settle towards the bottom.

7. Heat the Pan: Place a very thin layer of oil in a frying pan and heat it.

8. Pour and Bake: Pour about 8 minutes of batter into the ladle and bake it on medium heat. When the surface looks lumpy and the edges are slightly burnt and colored, use chopsticks to lift it a bit and flip it over by hand. If it's hot, you can use a spatula. Bake the other side for about 10 seconds.

9. Stack and Serve: Bake the crepes one after another and stack the baked ones on a plate. Fold the dough, place about 3 pieces on a plate, sprinkle lightly with salted butter and powdered sugar, and serve. You can get about 8 pieces in a 20cm frying pan, and 5 to 6 pieces in a 26cm frying pan.
