1. Soak Gelatin: Soak 3g of gelatin leaf for the thin jelly and 3g for the thick jelly in separate trays filled with water and ice. Let them sit until softened.

Making the Thin Jelly:

1. Heat Ingredients: In a saucepan, combine 280g of water, 30g of granulated sugar, and 10g of lemon juice. Heat until it starts to boil, then turn off the heat.

2. Dissolve Gelatin: Squeeze the excess water from the soaked gelatin leaves and add them to the hot mixture, stirring until dissolved.
