  • A (Cake Batter):
    1. 6 egg yolks
    2. 2 whole eggs
    3. ¼ cup vegetable oil
    4. 80ml thick coconut milk
    5. 85g all-purpose flour
    6. 10g cornstarch
  • B (Meringue):
    1. 5 egg whites
    2. 7 tbsp sugar
    3. 1 tsp lemon juice
    4. ¼ tsp cream of tartar

    Instructions:

  • Prepare the Batter:
    1. In a bowl, mix all ingredients A except the flour and cornstarch. Stir until well combined.
    2. Gradually add the flour and cornstarch, mixing gently until smooth.
  • Make the Meringue:
    1. In another bowl, beat the egg whites, sugar, lemon juice, and cream of tartar using a mixer.
    2. Whip until stiff peaks form (the mixture should hold its shape when flipped upside down).
  • Combine Both Mixtures:
    1. Gently fold the meringue into the cake batter, adding it little by little.
    2. Use a spatula and fold carefully to keep the air in the batter.
  • Steam the Cake:
    1. Grease a baking pan with margarine and line it with parchment paper.
