Ingredients
- 3–4 potatoes
- Oil, for frying
- Chili powder
- Barbecue seasoning
- Wooden skewers or toothpicks
Instructions
1. Prepare the Potatoes
- Peel and wash the potatoes.
- Cut each potato into long rectangular strips.
2. Create the Accordion Cuts
- Place the potato between two chopsticks.
- Slice straight down across the potato without cutting all the way through. The chopsticks will stop the knife from cutting completely.
- Turn the potato over.
- Cut diagonally across the other side.
Once stretched gently, the potato will open into an accordion shape.
3. Wash & Dry
- Rinse the potatoes well to remove excess surface starch.
- Pat completely dry with paper towels.
4. Add the Skewers
- Carefully insert skewers or toothpicks through the center of each potato.
5. Fry the Potatoes
- Heat oil until about 60% hot over medium heat.
- Fry the potatoes over medium-low heat until lightly golden.
- Remove and let rest briefly.
- Fry a second time until deep golden brown and extra crispy.
Finishing Touch
While still hot, sprinkle generously with:
