1. Melt the colored chocolates and coat chocolates for decoration in a hot water bath. Fill a cornet with one color at a time, squeeze out flowers and hearts onto a baking sheet lined with an OPP sheet or baking sheet, and cool to harden at below 18 degrees Celsius.


2. Prepare the chopped chocolate in a bowl. By chopping it up, you can melt it evenly and quickly.


3. Add the fresh cream to the bowl from step 2 and heat in the microwave at 600W for 30 seconds in two batches, keeping an eye on the process to melt the chocolate.


4. When the chocolate begins to melt, stir with a rubber spatula until it melts evenly.


5. While cooling the bottom of the chocolate from step 4, carefully mix it with a spatula until it has the consistency of peanut butter. Add half the diced roasted almonds if you like and mix.


6. Put Step 5 into a piping bag fitted with a large round nozzle.

7. Pipe the dough into about 13 to 14 pieces onto a tray lined with baking paper and chill in the refrigerator for about 15 to 30 minutes to harden. If you leave it in the refrigerator for a long time, it will be difficult to roll it up later, so please check it frequently.

8. When the piped truffles are hard enough to be rolled, put on disposable rubber gloves and roll them neatly. Chill them again in the refrigerator until they harden.

9. For an easy tempering version, melt the chocolate over a double boiler to about 40-45 degrees. When the chocolate has cooled to 34 degrees, add My Cryo and mix well for easy tempering. Keep it at 32 degrees until you use it. If tempering is troublesome, use convenient coating chocolate.

10. Place the chocolate from step 8 that has cooled and hardened in the refrigerator on a fork, dip it in tempered chocolate or coated chocolate, and cool again to harden. If it is difficult to dip, pour the chocolate over it with a spoon.

11. Once the coated truffles have hardened and won't stick to your hands, melt the remaining chocolate from the coating or your favorite coated chocolate. Stuff it into a cornet, draw your favorite design, and use the flower chocolate made in Step 1 as an adhesive. Put it on.

12. Put these delightful truffles in your favorite case, and they are ready to be shared and enjoyed.
