Ingredients
Cookie Base
- Ladyfingers (Savoiardi biscuits), as needed
- 150 g strawberry jam or strawberry confit (for the filling)
Strawberry Soaking Syrup
- 2 tbsp strawberry jam
- Juice from ½ lemon
Mix well to create a sweet and slightly tangy soaking liquid.
Mascarpone Cream
- 200 g mascarpone cheese
- 350 g heavy cream (well chilled)
- 60 g sugar
Step-by-Step Instructions
Step 1 – Prepare the Ladyfingers
- Mix the strawberry jam and lemon juice to create the soaking liquid.
- Quickly dip each ladyfinger into the mixture. Do not soak too long.
- Place the dipped biscuits into the freezer until firm. This helps them keep their shape when assembling the dessert.
Step 2 – Make the Mascarpone Cream
- In a bowl, soften the mascarpone using a spatula until smooth.
- Add the cold heavy cream and sugar.
- Whip with an electric mixer until the cream becomes thick and smooth with visible lines. Be careful not to overwhip.
Step 3 – Start Assembling
- Lay a large sheet of plastic wrap on the table.
- Spread a thick strip of mascarpone cream in the center.
- Place the frozen soaked ladyfingers on top of the cream.
- Spread the 150 g strawberry confit over the ladyfingers for the fruity center.
Step 4 – Cover with Cream
- Add another layer of mascarpone cream on top.
- Make sure the ladyfingers are fully covered and enclosed inside the cream.
Step 5 – Shape the Lips
- Lift both sides of the plastic wrap and roll it tightly like wrapping candy.
- Gently shape the dessert with your hands through the plastic wrap.
