Banana Pound Cake

Banana Pound Cake is one of those comforting bakes that instantly makes the kitchen smell warm and cozy. The ripe bananas give the cake a naturally sweet flavor and incredibly moist texture, while the buttery crumb makes every slice soft, rich, and satisfying.

This recipe is perfect for using up overripe bananas sitting on the counter. Instead of throwing them away, they become the star ingredient in a cake that tastes even better the next day. The walnuts on top add a little crunch and pair perfectly with the soft banana cake underneath.

I especially love enjoying a slice with coffee or tea in the afternoon. It’s simple, homemade, and not overly sweet the kind of cake you can happily eat for breakfast, dessert, or as a little snack throughout the day

Ingredients

  • 2 eggs
  • 3 ripe bananas
  • 160 g cake flour
  • 45 g granulated sugar
  • 70 g unsalted butter, melted
  • 6 g baking powder
  • Walnuts, for topping

Instructions

1. Prepare the Batter

1. Mash the bananas into a smooth puree.

2. Add the eggs and mix until fully combined.

3. Pour in the melted butter and stir well.

2. Add Dry Ingredients

1. Add cake flour and baking powder.

2. Mix until the batter becomes smooth with no dry flour remaining.

3. Transfer the batter into a piping bag if desired for easier pouring.

3. Prepare the Pan

1. Grease a 21×8×5 cm loaf pan with butter.

2. Pour the batter into the pan and smooth the surface.

3. Sprinkle walnuts on top.

4. Bake

1. Preheat the oven to 180°C (356°F).

2. Bake for about 45 minutes or until golden brown.

To check if the cake is done, insert a toothpick into the center. If it comes out clean, the cake is ready

5. Cool & Serve

1. Let the cake cool on a wire rack.

2. Remove from the pan and slice.

For an even richer flavor and softer texture, let the cake rest overnight before serving.

Tips

  • Use very ripe bananas for the best sweetness and flavor.
  • Cake flour gives the cake a softer crumb because it has lower protein content.
  • Add chocolate chips or cinnamon if you want extra flavor variations

Soft, buttery, and full of banana flavor this Banana Pound Cake is the kind of homemade treat that never gets old
