- 300g strawberries (about 10.5 oz)
- 140ml whipping cream (1/2 cup + 1 tbsp – use dairy or plant-based)
- 50g sugar (1/4 cup)
- 35g cornstarch (1/3 cup)
- 1 tsp vanilla extract (optional but lovely)
- Step 1: Make the Strawberry Base
Blend the strawberries, sugar, and cornstarch until smooth. Cook the mixture in a saucepan over medium heat, whisking constantly, until it thickens. Remove from heat and stir in vanilla extract if using. - Step 2: Chill the Mixture
Let the strawberry base cool a bit. Cover it with plastic wrap touching the surface, and place it in the fridge for about 1 hour to chill fully. - Step 3: Whip the Cream
While chilling, whip the heavy cream until soft peaks form — it should be smooth and airy. - Step 4: Combine Gently
Gently fold the cold strawberry mixture into the whipped cream using a spatula. Go slow to keep the mousse light and fluffy. - Step 5: Serve & Enjoy
